You know you are a superb dietitian when your 8 year old daughter harvests the first zucchini of the summer and says, "Oh, yes! We get to have chocolate zucchini bread!"

Chocolate Zucchini Bread
1 1/2 cups vegetable oil
3 cups sugar
2 Tbsp butter or margarine, melted
1 1/2 tsp vanilla extract
1 1/2 tsp almond extract
4 eggs
3 cups grated zucchini
3 cups all-purpose flour
1/2 cup cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1/4 tsp ground cinnamon
In a large bowl, mix oil, melted butter, sugar, vanilla, almond extract, and eggs. Stir in zucchini. Add dry ingredients and mix until blended. Pour into three greased and floured 8-in X 4-in X 2-in loaf pans. Bake at 350 degrees for 55-60 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack.
(You only have to eat half a loaf to get a full serving of vegetables!)
Super delicious and as I am always an over-achiever, I'll eat the whole loaf. Two servings of vegetables are better than one!
ReplyDeleteI think Deceptively Delicious even puts spinach in theirs! She puts spinach in her brownies, too, or avocado maybe... I tried them and you really can't taste it! I love that cookbook. Found it at Costco. :) Way to grow a zucchini though! Just like Michelle Obama, you are.

ReplyDeleteI get so excited watching our garden grow. The anticipation of tomatoes, squash and cucumbers - wonderful. We harvested our first zuke last week. It was heavenly. I know I'll have crooknecks ripe when I get home after a week in Cedar City.
So, 1.5 loaves= 3 veggie servings... cool, I ate better than I thought! :D
